Zucchini Potato Latkes with Tzatziki

Fresh from the garden food! Here's a great recipe for all that zucchini you may be growing. A nice light supper---leftovers for maybe some eggs benedict is perfect for a Sunday brunch. Cooking time takes a little longer I found. Be sure after shredding the zucchini to place them on paper towels and blot the water naturally inside to reduce mush.
